  3. Know your tools I’ve had this knife for a couple years now and love using it. Knives are very personal, so be sure to try it out in a store to see how it feels in your hand. This knife fits my hand well in a pinch grip, particularly so because it doesn’t have the typical Western bolster. This is a little ironic since the pinch grip isn’t as prevalent with Japanese chefs, but it works well for me.
